Cheesy Ham and Egg Sandwiches with Leftover Hard-Boiled Easter Eggs

Use leftover hard-boiled eggs to make these toasty and cheesy ham and egg sandwiches!

Ingredients

  • 4 hard boiled eggs chopped
  • 2 slices American cheese chopped up
  • ¼ cup small diced ham cubes or cut up 2 slices deli ham
  • 1 heaping tablespoon mayonnaise
  • Salt & pepper
  • 6 small hamburger buns

Instructions

  • Mix all together and then spread inside buns (we used leftover dinner rolls from Easter also).
  • Wrap in foil and heat in the oven at 400 degrees until warmed through – appx 10-15 minutes.

Notes

The filling is also great on slider rolls or Kings Hawaiian rolls. 
You can substitute shredded cheddar cheese for the American cheese.
For camping, wrap the sandwiches in foil and cook on rack on top of your campfire or placed around the edge of your fire.
