- 4 slices bread
- 1/2 cup shredded mozzarella cheese
- 3/4 cup fresh spinach leaves
- 1/4 cup feta cheese crumbled
- 1/2 tsp oregano
- 1 Tbsp butter
- sundried or roasted tomatoes OPTIONAL
Lay out two pieces of bread on your work area.
Divide mozzarella and spread half on each slice.
Lay spinach leaves on top of cheese.
Sprinkle spinach with the feta cheese and oregano.
If using, top with the tomatoes.
Place second slice of bread on top of each sandwich.
Melt 1/2 the butter in a skillet over medium heat.
Add sandwiches and cook until bread is toasted (you can keep a lid on the pan while cooking the first side to make sure the cheese melts through).
Flip the sandwiches, adding the rest of the butter before returning to pan.
Cook until second side is toasted.
