Ingredients

  • 4 slices bread
  • 1/2 cup shredded mozzarella cheese
  • 3/4 cup fresh spinach leaves
  • 1/4 cup feta cheese crumbled
  • 1/2 tsp oregano
  • 1 Tbsp butter
  • sundried or roasted tomatoes OPTIONAL

Instructions

  • Lay out two pieces of bread on your work area.
  • Divide mozzarella and spread half on each slice.
  • Lay spinach leaves on top of cheese.
  • Sprinkle spinach with the feta cheese and oregano.
  • If using, top with the tomatoes.
  • Place second slice of bread on top of each sandwich.
  • Melt 1/2 the butter in a skillet over medium heat.
  • Add sandwiches and cook until bread is toasted (you can keep a lid on the pan while cooking the first side to make sure the cheese melts through).
  • Flip the sandwiches, adding the rest of the butter before returning to pan.
  • Cook until second side is toasted.
