- 4 medium potatoes
- 1/2 green or yellow bell pepper chopped
- 1/2 red bell pepper chopped
- small onion slivered
- 2 Tbsp vegetable oil
- salt and pepper to taste
- optional: garlic powder sage, or other seasonings you like
Heat oven to 450 degrees.
Dice the potatoes into cubes about 1/2 inch on each side.
Mix potatoes with peppers and onions along with the oil and seasonings.
Spread on a greased rimmed baking pan or cookie sheet.
Bake for 40-50 minutes, flipping once or twice, or until crispy.
