Low Carb Beef and Broccoli

Ingredients

  • 1 lb thinly sliced sirloin steak
  • 1 medium onion sliced
  • 1 lb. broccoli florets
  • 1 tablespoon olive oil
  • 2 tablespoon raw honey
  • 3 tablespoon soy sauce
  • 2 tablespoon xanthan gum
  • 1 cup beef broth
  • 2 teaspoon ground ginger powder
  • 1 tablespoon minced garlic
  • ½ tablespoon sesame seeds optional for garnish
  • 1 green onion chopped (optional for garnish)

Instructions

  • In a bowl, combine  honey, soy sauce, ginger powder, and minced garlic and whisk together. Place aside.
  • Sprinkle xanthan gum over the slices of steak, and using tongs, make sure all beef is coated.
  • Preheat a skillet on medium-high heat and add the olive oil.
  • Transfer beef to skillet but be sure not to overcrowd the pan (you will likely need to cook ½ the beef mixture at a time).
  • Cook the meat for around 2 and a half minutes per side until browned and then transfer to a plate to rest.
  • Keep the skillet on the heat and turn it to high. Quickly pour in the broth to deglaze for around 1 and a half minutes.
  • Toss in the sliced onion and broccoli florets and cook for 3 minutes, stirring to combine everything.
  • Take the sauce that you set aside earlier and add it into the skillet along with the beef.
  • Reduce the heat to medium-low and cook for another 4 minutes, being sure to combine everything until sauce thickens.
  • Finish off with the sesame seeds and green onion for garnish, if you choose.

Notes

Cornstarch can be used in place of the xanthan gum if you're not concerned about the carbs.
Coconut aminos can be used in place of the soy sauce to reduce the sodium.
