Ingredients

  • cup red wine vinegar
  • 1 teaspoon Dijon mustard
  • 2 teaspoons dry oregano
  • 1 Tablespoon fresh basil
  • ¼ cup chopped fresh parsley
  • ¼ teaspoon red pepper flakes
  • 1 tablespoon sugar
  • cup finely grated parmesan cheese
  • 1 teaspoon salt
  • ¼ teaspoon cracked black pepper
  • 1 cup olive oil

Instructions

  • In a medium bowl, whisk together olive oil, vinegar, dijon mustard, and parmesan.
  • Add in oregano, basil, parsley, red pepper, sugar, salt, and pepper. Whisk well.
  • Place in a jar.

Notes

  • If you don't have fresh basil and parsley on hand, you can substitute a teaspoon of dried basil for the fresh and/or one tablespoon dry parsley for the fresh.
  • If you store this in the fridge and it's too cold, the oil will become solid. Just bring it back to room temperature before using.
