Ingredients

  • 1 ½ cups buckwheat flour
  • ½ cup sugar
  • ½ cup brown sugar
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon cinnamon
  • 1 cup milk
  • 2 eggs beaten
  • cup olive oil

Instructions

  • Preheat oven to 325 degrees.
  • Grease muffin tins.
  • Combine dry ingredients in a large bowl.
  • Add wet ingredients and stir well. Batter will be runny.
  • Fill muffin tins ⅔ full.
  • Bake approximately 30 minutes or until toothpick inserted in center comes out clean.
