Preheat the oven to 350 degrees. Prepare two large, rimmed baking sheets with parchment paper. In a mixing bowl, beat together the cake mix, oil, vanilla, and eggs until well blended.
Fold in ½ cup of sprinkles into the mixture and keep mixing.
Using a cookie scoop, portion the cookie dough. If desired, roll the cookies in the remaining sprinkles. Place the cookie dough balls on the prepared baking sheets about 1 to 2 inches apart.
Bake for 9 to 11 minutes or until the cookies are set on the edges. Remove the baking sheet and allow the cookies to cool on the baking sheet for 5 minutes prior to removing to cool completely on a wire cooling rack and you should be done!
