Ingredients

  • ¼ cup butter room temperature
  • 1 cup sugar
  • 1 egg room temperature
  • 3 medium ripe bananas mashed
  • 1 teaspoon vanilla extract
  • 2 cups all purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup semisweet chocolate chips divided

Instructions

  • Preheat the oven to 350 degrees.
  • In a small bowl, whisk together the dry ingredients: flour, baking soda, and salt. Set aside.
  • In a mixing bowl, beat the butter and sugar until the sugar is completely incorporated. Add the egg, bananas, and vanilla, beating until combined.
  • Add the flour mixture and mix just until blended. Stir in half of the chocolate chips.
  • Pour batter into a 12 inch cast iron skillet and spread evenly. Top with remaining chocolate chips.
  • Bake for 25 to 30 minutes or until a toothpick inserted in the center comes out clean.
  • Cool the banana bread on a wire rack before cutting into wedges and serving.

Notes

This recipe is best suited for a 12-inch cast iron skillet.
