Ingredients

  • 1 Smithfield Marinated Fresh Pork Loin Filet
  • 1 cup vegetable or chicken stock
  • One 12-ounce package fresh cranberries
  • 1 orange
  • 1 cup sugar
  • 2 teaspoons water
  • 1/2 cup walnuts chopped

Instructions

  • Add vegetable or chicken stock and Smithfield Marinated Fresh Pork Loin Filet to slow cooker.
  • Cook on high for 3 hours.
  • Turn down to low for one hour.
  • When slow cooker has 30 minutes left, begin making the Cranberry Walnut Relish.
  • In a medium saucepan, add cranberries, walnuts, sugar, zest and juice of one orange, and water.
  • Cook over low heat for about 10 minutes, or until cranberries are soft.
  • Cool before serving.
