Heat oven to 350 degrees.
Whisk together the flour, salt and baking powder.
In a separate, large bowl beat together the sugar and butter on medium speed about 5 minutes or until light and fluffy.
Beat in the vanilla and the eggs one at a time.
Turn down the mixer to slow and slowly add in the flour mixture just until combined.
Divide the dough into fourths and remove one fourth from the bowl.
Add several drops of food coloring to the dough and beat until color is evenly distributed. Add color until you get the shade of green you like.
Roll the green dough into balls about 1" across.
Roll the uncolored dough into little balls about 1/3" across.
Put the green balls about 2" apart on a baking sheet lined with parchment paper or a baking mat.
Place 4 of the little balls at the top side of each green ball.
Using a flat-bottomed glass or bowl, press down on each cookie to flatten.
Bake approximately 11 minutes (rotating the baking sheet once) or until just barely beginning to brown. Don’t overcook!
Let cool for a few minutes on the baking sheet and then transfer to a wire cooling rack to cool completely before handling.
