The Good Dinosaur Cookies

These cute and delicious cookies look just like the bottom of a dinosaur foot!

Ingredients

  • 2 1/2 cups all purpose flour
  • 1/2 tsp salt
  • 1/2 tsp baking powder
  • 1 cup sugar
  • 1 3/4 sticks unsalted butter softened (14 Tbsp)
  • 2 tsp vanilla extract
  • 2 large eggs
  • green food coloring

Instructions

  • Heat oven to 350 degrees.
  • Whisk together the flour, salt and baking powder.
  • In a separate, large bowl beat together the sugar and butter on medium speed about 5 minutes or until light and fluffy.
  • Beat in the vanilla and the eggs one at a time.
  • Turn down the mixer to slow and slowly add in the flour mixture just until combined.
  • Divide the dough into fourths and remove one fourth from the bowl.
  • Add several drops of food coloring to the dough and beat until color is evenly distributed. Add color until you get the shade of green you like.
  • Roll the green dough into balls about 1" across.
  • Roll the uncolored dough into little balls about 1/3" across.
  • Put the green balls about 2" apart on a baking sheet lined with parchment paper or a baking mat.
  • Place 4 of the little balls at the top side of each green ball.
  • Using a flat-bottomed glass or bowl, press down on each cookie to flatten.
  • Bake approximately 11 minutes (rotating the baking sheet once) or until just barely beginning to brown. Don’t overcook!
  • Let cool for a few minutes on the baking sheet and then transfer to a wire cooling rack to cool completely before handling.
