Ingredients

  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour
  • 1/4 cup sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 large eggs lightly beaten
  • 1/4 cup unsalted butter melted
  • 1 cup buttermilk

Instructions

  • Preheat oven to 400 degrees F.
  • Whisk your dry ingredients together.
  • In a separate bowl, mix your wet ingredients together.
  • Incorporate the wet ingredients into the dry ingredients. Do not over-mix!
  • Bake 20-25 minutes or until a toothpick comes out clean.
  • Allow to cool 15 minutes.
  • Cut and serve.
