Ingredients

  • 1 cup sour cream
  • 1 15 oz can whole kernel corn drained
  • 1 15 oz can cream-style corn
  • 1 8.5 oz can cornbread mix (such as Jiffy)
  • ½ cup unsalted butter melted

Instructions

  • Set your oven to 350°F (175°C). Grease a 9x13-inch baking dish. In a large bowl, combine the sour cream, whole kernel corn, cream-style corn, cornbread mix, and melted butter.
  • Stir until the mixture is evenly mixed. Ensure you complete this step thoroughly before proceeding to the next step in the process.
  • Transfer the mixture to the prepared baking dish, spreading it evenly.
  • Bake in the preheated oven for 45-50 minutes, or until the top is golden brown and the center is set. Let the casserole cool for about 5 minutes before serving.

Notes

  • Don’t overbake! Remove once the center is just set to keep it creamy. Let it rest for a few minutes so it slices cleanly.
  • Use room-temperature sour cream for a smoother mixing experience.
  • Cover loosely with foil if the top browns too quickly. This helps you stop it from being overly toasted.
