Ingredients

  • 10 red potatoes; peeled can use any type of potato that you'd like
  • 2 carrots; diced small
  • 2 celery stalks; diced small
  • 1 white onion; diced small
  • 1/2 small head of cabbage; chopped
  • 1 tablespoon marjoram
  • 1 teaspoon paprika
  • 2 teaspoons salt
  • 2 teaspoons pepper
  • 1 - 28 oz container vegetable broth
  • 4 cups water more for 8qt Instant Pot
  • *parsley​ for topping

Instructions

  • Peel and dice the potatoes.
  • Dice carrots, celery, and onion.
  • Chop the cabbage.
  • Add the potatoes, carrots, celery, onion, and cabbage to the Instant Pot.
  • Add vegetable broth and water. Stir in seasonings. 
  • Lock Instant Pot lid in place and set valve to seal.
  • Turn on the Instant Pot and set the high-pressure setting for 10 minutes. 
  • Once the Instant Pot is finished, release the pressure.
  • Taste soup and add in more salt or other spices to taste.

Notes

This recipe works best with white (vs. red) cabbage.
Optional: Serve garnished with chopped parsley.
