For this “Greatest Hits” edition of Works for Me Wednesday, I wanted to share one of my most popular blog posts so far – My DELICIOUS & Healthy Oatmeal Chocolate Chip Cookie Recipe. I wrote about this recipe on my other blog, Jinxy Knows Best, which is devoted to “Healthy Living in Support of the Environment”. It is really surprising how many people have visited my blog specifically for this recipe! Since I started making these cookies several months ago, I make at least one batch a week. They are much lower in sugar and fat than other cookies and are much higher in fiber. The best part is that they taste great! They are definitely our snack of choice.
Healthy Oatmeal Chocolate Chip Cookies
Ingredients:
1/4 cup applesauce
2 Tbsp. butter
1/3 cup white sugar
1/2 cup brown sugar
1 egg
1 tsp. vanilla extract
1 cup whole wheat flour
3/4 tsp. salt
1 tsp. baking soda
1 tsp. cinnamon
3/4 cup quick cooking oats
3/4 cup dark chocolate chips or crushed dark chocolate bar
Directions:
Preheat oven to 350 degrees. Beat together applesauce, butter and sugar. Beat in egg and vanilla. In a separate mixing bowl, stir together flour, baking soda, salt and cinnamon. Stir flour mixture into first mixture and mix well. Then stir in oats, followed by the chocolate. Place rounded tsp-full 2 inches apart on an Exopat baking mats on a cookie sheet. Bake 10-12 minutes.
You can bake these directly on the cookie sheets, but I love using the Exopat mats because they don't stick AT ALL and the clean-up is super easy. Once you take off the cookies you just shake it clean and store it away. They're also guaranteed to last up to 3,000 bakings. Click on the picture for more info.

These cookies were AWESOME! They were just what I was looking for. I first searched for a “typical” oatmeal chocolate chip cookie recipe but found that it had tons of butter, sugar, etc. and there really is no need for it. My kids loved these, and so did my husband. Ok, I ate a few too . . !

I used mashed banana instead of applesauce. Will omit white sugar and use only the 1/2 cup brown sugar next time. A little too sweet for me using recipe as is. Overall, a good cookie and much healthier than the regular ones!
