It’s that time of year for holiday baking! I’m always looking for yummy new recipes, so I thought I would kick off Thrifty Jinxy’s Holiday Cookie Exchange! This is my very favorite thing my Mom makes every year. She made them last week and I already ate a bunch of them already! They have three layers, a chocolaty/coconut bottom layer, a creamy vanilla middle layer and then a rich chocolate top layer.
Napoleon Cremes Recipe
1 C butter, softened
1/4 C sugar
1/4 C baking cocoa
1 tsp vanilla extract
1 egg, lightly beaten
2 C finely crushed graham cracker crumbs
3 Tbsp milk
3.4 oz package instant vanilla pudding mix
2 C confectioners sugar
1 C semisweet chocolate chips
3 Tbsp butter
Combine 1/2 cup butter, sugar, cocoa and vanilla in a double boiler over medium low heat. Stir until butter is melted. Add egg. Cook and stir until thickened, about 5 minutes. Add in crumbs and coconut. Press into a greased 9 inch square baking pan. In a bowl, cream remaining butter. Add milk, pudding mix and confectioners’ sugar. Beat until fluffy. Spread over crust. Refrigerate until firm (1-1/2 to 2 hours). Melt chocolate chips and butter in double boiler. Cool slightly. Spread over pudding layer. Refrigerate. Cut into bars.
