Summer Pastabilities with Hodgson Mill – Tex Mex Bow Ties Recipe

Summer is a great season for pasta. It’s super flexible and most recipes can be made right on the stove top – so no heating up the house with the oven! This yummy pasta dish uses Tex Mex Flavors. It also tastes great served cold for lunch the next day!

1 box Hodgson Mill Whole Wheat Bow Tie Pasta
1 cup corn kernels (fresh cut works best, but well drained frozen or canned works too)
1 tsp chili powder
½ tsp ground cumin
Salt & pepper to taste
1 Tbsp olive oil
1 small onion, diced
½ green pepper, diced
1 cup cooked shredded or chopped chicken breast
1 cup salsa
½ cup Mexican cheese (Queso Fresco)

Follow package directions to prepare pasta. While it is boiling, heat a large frying pan coated with cooking spray over medium heat. Add corn, sprinkle with chili powder, cumin, salt and pepper. Cook, stirring frequently, until kernels are browned. Set corn aside. Add oil to pan and heat. Sautee pepper and onion. Stir in chicken, and salsa – heat through.
