Steak Street Tacos with Corn
I’m always exploring fun new taco recipes, which are now at the top of my list. Who knew that using steak for tacos was so simple and easy to do just like my sheet pan steak fajitas recipe? The more times I make this steak taco recipe, the more I can see how it can easily be changed up every time!
I love the flavor of the feta cheese and the lime in these steak tacos, but you can easily use any other type of cheese as well. Cotija cheese will give it an even more authentic taste.
This beef street tacos recipe allows you to have fun and be flexible in your additions and toppings, while the grilled steak tastes amazing, the star of the show is that Mexican street corn style topping!
Elote (aka Mexican Street Corn) is a food cart favorite with a piping hot ear of corn slathered in mayo and then coated in cotija cheese and sprinkled with Tajín. It’s SO good! We do a few twists on that to turn it into a corn salsa.

What You Need to Make Steak Tacos
- sirloin steak – You can also use flank steak or skirt steak as well.
- corn tortillas – Flour tortillas can be an option, too.
- corn on the cob
- garlic salt
- Tajín or other chili powder – Leave this out for a more mild version.
- onion powder
- olive oil mayo
- avocado oil
- limes
- feta or cotija cheese
- fresh cilantro

How To Make Steak Tacos
Below are the simple steps that you need to make to create these amazing tacos. You’ll find this recipe simple to do and the perfect family meal!
Take a large skillet and let it preheat on medium-high. Then, drizzle your avocado oil into the skillet and add your corn.
Allow corn to “grill” until you see a bit of charring happening, and turn the cobs over so that you get the same char happening on all sides.
Once that is done, remove the corn cobs onto a plate and let it cool slightly while preparing the steak.
Season your steak with the garlic salt and sear it in the same pan you used for the corn, but turn the heat up to high.
Cook until your preferred level of doneness and then place the meat onto a cutting board where you will let it rest for a few minutes while you go back to the corn.
Now that your corn is cooled down, some take a knife and slice the corn off the cobs.
Transfer the kernels of corn into a bowl and mix in your other dry seasonings (chili powder and onion powder), along with your chopped fresh cilantro and mayo.
At this time, slice 1 of your limes and add the juice from that in as well. Incorporate everything all together and let it rest in the bowl while you slice your steak. (Remember to cut against the grain!)
Once your steak is sliced and set aside, take your corn tortillas and cook them through in the same skillet you used for the steak and corn (delicious flavors!) on medium-high heat.
After that, take your “grilled” tortillas and assemble your tacos by adding in some of your sliced steak, corn salsa and then topping with the feta cheese.
You can also set some lime wedges on the side if you would like to add a bit more lime juice on top. Enjoy!

The best part about making tacos is that there are usually leftovers! You can store your taco meat in a container in the fridge and keep it fresh for another meal for another day.
What type of cheese is best for street tacos?
While we used feta cheese for these particular tacos, you can also use cotija cheese.
What cut of beef is best for steak tacos?
The most common types of beef for a steak taco or carne asado taco are flank steak or skirt steak, but we love the way sirloin steak adds flavor to this taco.

Ingredients
- 1 lb. sirloin steak
- 1 package of corn tortillas
- 3 ears of corn
- 1/2 tsp garlic salt
- 1 tsp chili powder
- 1 tsp onion powder
- 1 tbsp olive oil mayo
- 1 tbsp avocado oil
- 2 limes or 1, if you don't plan to garnish with wedges
- 1 package of feta or cojita cheese crumbled 170g
- 2 tbsp chopped cilantro
Instructions
- Take a large skillet and let it preheat on medium-high.
- Then, drizzle your avocado oil into the skillet and add your corn.
- Allow corn to "grill" until you see a bit of charring happening, and turn the cobs over so that you get the same char happening on all sides.
- Remove the corn cobs onto a plate and let it cool slightly while you prepare the steak.
- Season steak with the garlic salt and sear it in the same pan used for the corn, but turn the heat up to high.
- Cook to preferred level of doneness and then place meat onto a cutting board.
- Let meat rest for a few minutes.
