As we move into September, we also move into harvest season. When we think of Harvest Season, we often think of Fall produce only like pumpkins, apples and squash. But, the truth is that in many parts of the country this is when ALL the garden vegetables are at their peak. We visited our local farmers market this weekend and the tables were PACKED! Tomatoes, peppers, carrots, beans, corn, radishes…..you name it, it was there!
And because there was such an abundance available, the prices were the best I have sen them in a long time. Whether you grown your own veggies in the garden or if you stock up at your local farmer’s market, now is the time to preserve those goodies so you have them available this winter. There are several ways to preserve vegetables, but one of the best is to freeze them. The key is to freeze when they are at the peak of their freshness as that is also when they have the peak amount of vitamins and nutrients.
