These delicious little Reese’s Brownies Cups are so easy to make! All you need is a brownie mix, Mini Reese’s Peanut Butter Cups, eggs, milk and butter!
When talking about Halloween treats concerns chocolate candy, it’s really hard to beat Reese’s Peanut Butter Cups! That combination of chocolate and peanut butter is so amazing!
But when it comes to having a small dessert or sweet treat, chocolate alone often doesn’t do it for me and I want something baked – cookies, cupcakes, cake or, best of all, brownies!
So, it’s logical I would want to put together the chocolate candy perfection of Reese’s cups along with the deliciousness that is brownies. That’s exactly what these Reese’s Brownies Cups are!
I also love that they are so easy to put together. Basically, you just prepare a brownie mix according to the package directions, but bake in mini muffin tins before adding the Reese’s peanut butter cups, BUT WAIT!
To make these sweet treats extra good, I have tweaked the “normal” brownie mix directions a little. These tricks are something I have done for a long time and you can see them in my years-old post of How to Make Box Brownies Taste Homemade.
Yes, you absolutely can use the water and oil called for on a box of brownie mix. BUT, if you want your brownies to taste even better, go ahead and substitute milk for the water and use melted butter instead of oil.
There is no universe where the taste of oil will beat the taste of melted butter. Am I right?
Beyond the box of brownie mix and the eggs, milk and butter (or the eggs, water and oil if you want to go that way), you just need some mini Reese’s Peanut Butter Cups.
You can buy a bag of Reese’s and unwrap them all, or save yourself a bit of work (and the temptation of eating them all as you unwrap them) and buy a bag of Reese’s Minis Peanut Butter Cups UNWRAPPED.
To make your Reeses Brownie Cups, you’ll need a mini muffin pan. I use this Wilton Perfect Results Premium Non-Stick Mini Muffin Pan and love it!
Most pans have space for 24 treats. You’ll end up with extra brownie batter when you’re done with this recipe so you have a few choices about what to do with the extra batter.
You can bake a second round of cups using up your batter to make about 6-8 extra cups. OR you can cook the rest of the batter in a small pan by itself for regular brownies.
OR you can do what I like to do and keep the batter to make mug cakes in the microwave when a late night baked good urge hits and your brownies cups are already gone!
Reese’s Brownies Cups Recipe
Reese’s Brownie Bites Ingredients:
- Box of Brownie Mix
- Reese’s Minis Peanut Butter Cups
- butter, melted
- cooking spray
How to Make Reese’s Brownie Cups:
Heat oven to 325 degrees F.
Spray mini muffin pan with cooking spray.
In a mixing bowl, combine brownie mix, eggs, milk and melted butter.
Fill muffin cups about 3/4 of the way full.
Bake 16-18 minutes. Check for doneness by inserting a toothpick into the center of a cup in the middle of the pan. It should come out mostly dry.
One removed from oven, immediately press a Mini Reese’s Peanut Butter Cup onto the top of each brownie cup. Press so it’s about even with the top.
Let cool COMPLETELY before removing from pan.
How long do Reese’s Brownies Cups Need to Cool?
These peanut butter cup brownie treats need to cool fully before you take them out of the pan or they can fall apart. Let cool for one to two hours.
You can speed up this process by placing in the refrigerator (don’t place the pan in while hot or it will raise the temp of the fridge itself) or, if you live in a cold climate like I do, you can place in an enclosed but unheated porch or someplace else in your house that gets cold.
What type of brownie mix should I use?
You can really use any flavor of brownie mix that you like. I love the Betty Crocker Dark Chocolate Brownie Mix, but if you’re not into dark chocolate you can get a milk chocolate flavor or any standard brownie mix.
I haven’t tried making these with a brownie mix that has “mix-ins” like mini chocolate chips, but I would be cautious not to use any type of brownies that tend to be more crumbly as you want your cups to stick together.
How to Store Reese’s Brownie Cups:
Store your cups in an airtight container at room temperature for 3-4 days. If you refrigerate, they will last up to a week.
Can you Freeze Reese’s Brownie Cups?
Yes, your treats can be frozen in an airtight container for 4-5 months. If you’ll be stacking them in your cotainer, place a sheet of waxed paper or parchment paper between the layers.
