Perfect for fall, this Pumpkin Butterscotch Pancakes recipe doesn’t stop at JUST pumpkin, it adds in butterscotch for an extra sweet treat. It’s easy to make breakfast in under 30 minutes!
What’s your favorite breakfast food? For me it has to be pancakes!! Next week we’ll be visiting my in-laws in Florida and I’m already looking forward to the pancakes my mother-in-law makes. She makes them perfectly with lightly crispy edges that are soooo good.
While I like a good “traditional” pancake, variations like my popular strawberry pancakes with cream cheese glaze and blueberry banana sheet pan pancakes are always super fun and a nice break from the normal.
Now that fall is here, it’s time to bring on another unique pancake featuring fall flavors with the grandaddy of them all – pumpkin!!
But, this pumpkin pancake recipe has a twist by adding in butterscotch flavor that comes courtesy of butterscotch chips, which are super easy to use and give a nice sweet “butterscotchy” flavor.

❍ Before You Begin:
These pancakes are a bit denser than your average pancake, but very yummy! I suggest cooking them over medium heat so the pancakes have time to cook through. Make sure your pan is hot enough before starting to cook!
This recipe makes about 10-12 smaller pancakes. If serving to a larger bunch you can easily double the recipe.

🧾 Ingredients Needed
I’ve made notes below on some of the ingredients needed. Look them over as I offer substitutions where possible.
- Flour – Opt for all-purpose aka regular flour.
- Granulated Sugar – We use white granulated sugar (You can opt for light brown sugar if you like.)
- Pumpkin Pie Spice – You can buy this right at the supermarket or mix up your own cinnamon, ginger, nutmeg and allspice in our pumpkin pie spice mix recipe.
- Milk – We opted for 2% cow’s milk. You can use unsweetened non-dairy milk in its place.
- Pumpkin Puree – Be sure to use 100% pumpkin puree and not pumpkin pie filling. You can also use our homemade pumpkin puree recipe.
- Pure Vanilla Extract – You’ll get better flavor from pure extract vs. imitation vanilla.
- Butterscotch Chips – This is how you get that butterscotch flavor in your pancakes. They also add extra sweetness.
- Melted Butter – We use unsalted butter. If you only have salted butter, reduce the amount of salt by 1/8 teaspoon. if you need a non-dairy option, melted plant-based butter or melted coconut oil will work.
- Additional Butter or Canola Oil – You’ll need to grease your pan before cooking. Butter adds great flavor, but I like the extra crispiness canola gives to the edge of the pancakes.

- Add Nuts – You can add pecans, walnuts or your favorite nuts. Chop coarsely and add at the same as the butterscotch chips.
- White Chocolate – You can turn these into Pumpkin White Chocolate Chip pancakes by substituting white chocolate morsels for the butterscotch.

Now that we’ve covered all the ingredients, let’s move on to making the pancakes!
STEP 1: In a large bowl mix together flour, sugar, salt, cinnamon, pumpkin spice and baking powder together.
STEP 2: In a medium bowl mix together pumpkin puree, milk, vanilla extract, melted butter and eggs together.
STEP 3: Gently fold in wet mixture to the dry ingredients.
Heat griddle or pan to medium heat. Melt a little butter on pan or use canola oil to grease it, add in a ¼ of pancake batter.
STEP 4: Add a few butterscotch chips to the top of each pancake before flipping. Brown each side of the pancakes for 3-4 minutes, flipping once, until cooked through.

- Mixing Dry Ingredients: To avoid lumps, whisk the dry ingredients thoroughly, breaking up any clumps of flour or baking powder.
- Avoid Over-mixing: Mix the wet and dry ingredients just until combined; over-mixing can result in tough pancakes.
- Resting the Batter: Allow the batter to rest for 5-10 minutes before cooking to let the leavening agents do their job and create fluffier pancakes.
- Preheat: Preheat your griddle or pan over medium heat, and test if it’s ready by sprinkling a few drops of water – they should dance and sizzle.
- Don’t Flip Too Early: Flip the pancakes only when bubbles form on the surface and the edges appear set to ensure even cooking.
- Keeping Warm: To keep pancakes warm while making more batches, place them on a baking sheet in a 200° oven. To keep the edges crispy you can place them on a baking rack on top of the baking sheet.
📝 Recipe FAQs
These delicious pancakes can be served however you prefer your traditional pancakes. Of course maple syrup is an excellent topping choice. (You can try our homemade maple syrup recipe.)
We like to throw on a few blueberries as a fresh complement to the sweet pancake. Chopped nuts are also a great option to give you a bit of a crunch.
If you prefer you can simply dust with a bit of powdered sugar and eat “as is”.
Pancakes are MUCH better when served immediately. If you do happen to have some left over, store in the refrigerator up to 2 days in an airtight container.
To reheat, place in microwave just until starting to warm. Then transfer to a toaster oven and toast on medium setting to give them back a bit of a crisp edge OR you can reheat on a cast iron skillet at a medium heat.
