This Ground Beef Taco Casserole Recipe is an easy weeknight dinner to get on the table in a hurry.

This easy taco casserole with ground beef is a recipe that I have been making for almost as long as I have been cooking in my own home.
Another option with this recipe is to make it with chicken instead of beef which gives you two easy and delicious casseroles!
When I was first married, I knew a lot of the basics of cooking, but I didn’t really know many recipes. This was something easy that I could make in a hurry that tasted great!!
The recipe calls for a packet of taco seasoning mix, but you can also substitute your own homemade taco seasoning – something that is super easy to mix together and keep on hand in your pantry.
As I mentioned, another “option” with this recipe is that I sometimes make it with chicken instead of beef.
To do that, I just dice up two chicken breasts and make sure it is cooked all the way through as the first step of the recipe preparation.
Whether I’m using the beef or the chicken, I always cook up that meat, pepper, onion mixture in my FAVORITE pan. I LOVE and use for at least 50% of our meals is this big ‘ol jumbo sauté pan.
The pan fits a lot, is nonstick so it cleans up super fast and even has a glass lid that is oven safe. It is SO versatile!

🧾 Ingredients Needed
- Ground Beef – I prefer lean so less draining of fat is neeed.
- Onion – White or yellow is fine.
- Green Pepper – If you prefer you can use red or yellow bell pepper.
- Taco Seasoning – By a packet or make your own taco seasoning.
- Canned Diced Tomatoes – Save the liquid.
- Canned Pinto Beans – Drain and rinse before using.
- Tortilla Chips – Thicker chips are better.
- Shredded Cheese – I like Mexican blend cheese, but you can also use cheddar.

🥣 How to Make
Preheat oven to 350 degrees. Brown ground beef with onion and green pepper. Drain fat.
Add in taco seasoning, undrained tomatoes and pinto beans. Cook until heated through.
Cover the bottom of a 9×9 baking dish with a layer of tortilla chips. Cover with half the meat mixture.
Sprinkle with 1/3 of the cheese. Add another layer of chips.
Add the rest of the meat mixture. Sprinkle with another 1/3 of the cheese.
Add a last layer of chips and top with the remaining cheese.
Place the casserole dish in the oven and bake for 20-30 minutes or until cheese is melted and beginning to brown.

- 14.5 oz diced tomatoes
- 1 15.5 oz can pinto beans drained and rinsed
- 1/2 bag tortilla chips
- 8 oz shredded cheddar or Mexican blend cheese
Instructions
