It’s easy to make a Gourmet Chocolate Ice Cream Sandwich packed with lots of chocolatey flavor! Start with store bought cookies or bake your own!
There are certain foods that just “scream” summer. At the top of that list is ICE CREAM! Whether it’s a big bowl sprinkled with toppings or just a classic cone – ice cream and summer definitely go together. So, it’s no surprise that July is National Ice Cream Month!
To celebrate this special month, I tried out some of the newest ice cream flavors from Kemps. I headed to the store on July 3rd and it was apparent that EVERYONE in Minnesota was stocking up on ice cream for the 4th of July because a lot of Kemps ice cream had already left the freezer case. Luckily they left at least a few cartons of each flavor and I was able to grab Cow Tracks Caramel Fudge, Toasted Almond Fudge and Old-Fashioned vanilla.
While we love ice cream straight-up in a cone or dish, I also like creating all new treats and desserts with it. I’m a big fan of Kemps Cow Tracks Caramel Fudge – its so smooth and chocolately with fun little fudge filled cows hiding inside as a surprise. So, I decided it would be just the perfect thing to make this Gourmet Chocolately Ice Cream Sandwich recipe.
Truthfully, these are almost too easy to be called a “recipe”. Only two ingredients are necessary! Of course you need the Kemps Cow Tracks Caramel Fudge ice cream for the filling and then you need the cookies! You can use brownie cookies from your local bakery or make your own with this Subway Copycat Double Chocolate Chip Cookie recipe.
Gourmet Chocolately Ice Cream Sandwich Recipe
Ingredients:
- Kemps Cow Tracks Caramel Fudge Ice Cream
- Bakery Brownie Cookies or Homemade Subway Copycat Double Chocolate Chip Cookie recipe
Directions:
Remove ice cream from freezer and allow to soften just a bit.
Place cookie upside down on a plate.
Place large scoop of ice cream on cookie.
Lightly press down on ice cream to spread to edges of cookie
Top with second cookie.
Return completed sandwich to freezer until frozen solid.
That’s it!! Easy, right?!?! I absolutely LOOOVE the way these Gourmet Ice Cream Sandwiches taste. Just typing this recipe up makes me ready to head to my freezer to grab another one!

Chocolate cookies and chocolate ice cream combine to make the ultimate Gourmet Chocolately Ice Cream Sandwich.
Ingredients
- Kemps Cow Tracks Caramel Fudge Ice Cream
- Bakery Brownie Cookies or Homemade Subway Copycat Double Chocolate Chip Cookie recipe
Instructions
- Remove ice cream from freezer and allow to soften just a bit.
- Place cookie upside down on a plate.
