This Easy Fruit Cocktail Cake Recipe is made with only FOUR ingredients! It’s a perfect cake to make for last minute company.
The easy cake recipe is so delicious that no one will ever guess just how easy it is to make or that it only took you 5 minutes to get it all mixed up and baking in the oven.
Since everything you need to make this easy fruit cocktail cake (except for the butter) is shelf stable, you can store the ingredients in the pantry to have on hand when you need to make a dessert in a hurry!
You start this yummy fruit cocktail cake with cake mix and in a few extra ingredients and you’re done.
While we like to use a white cake mix, a yellow cake mix is also a great option (especially if that is what you happen to have in your pantry.)
This recipe is so adaptable. As I mentioned, you can use a different cake mix to change the taste. For example, you can use a Butter Pecan Cake Mix and use pecans in the cake as well or in the garnish!

If you’re a coconut fan, add in a bit of coconut before baking. The options are only limited to your imagination!
The recipe calls for one half cup of butter (which is one stick), frozen. That might mean you want to keep a stick in the freezer to make the cake when the time comes.
Alternatively, you can grate up your frozen stick of butter ahead of time and then keep the frozen shreds in the freezer so that the recipe is even quicker to make when you’re ready to make an easy cake.
Easy Fruit Cocktail Cake Recipe
Ingredients:
1 White Cake Mix
1 15 oz. can Fruit Cocktail
¼ cup 7-up or Sprite soda (or any lemon lime type soda will do)
1/2 cup Butter, frozen and grated
How to Make Fruit Cocktail Cake:
Preheat your oven to 350 degrees.
Mix the cake mix, the (undrained) can of fruit cocktail and sprite together. Combine well.
Add the grated butter and mix until incorporated.
Put the batter into a greased spring form pan. After filling the pan, place it on a baking sheet in the oven in case some of the batter leaks.
Bake for 45 – 50 minutes or until a toothpick comes out clean.
Serve with a dollop of whipped topping/whipping cream or ice cream would be excellent as well!

i used to make this when I was 7 in the 60s. I was so glad to find this recipe again. We would add nuts and coconut. Thanks for bringing back good memories. I will experiment with bourbon.

Chrysa, have you ever made, or heard of someone making this with a sugar-free cake mix, n0-sugar-added fruit cocktail (it’s sweetented with splenda), and diet soda? I’m not supposed to have sugar.

I haven’t, but my guess is that it would still turn out ok. If you think the sugar-free cake mixes usually turn out ok (I haven’t tried one) then this recipe should also turn out. Changing the fruit to no-sugar added and using the diet soda won’t make a difference results-wise.

Anyone try using a lemon/lime or grapefruit Seltzer to cut some sugar & sweetness as one post mentioned using yellow cake which is what I have on hand.

I made this using a yellow cake mix. Very easy to make. Just gently mix everything together. I also used the soda called Squirt for the lemon lime soda . It came out delicious. Maybe because I used a yellow cake mix. I found it very sweet but it was very good.
