It’s made with Hodgson Mill pasta, which contain 100% Whole Wheat Durum Flour to retain beneficial nutrients and unbeatable flavor. It is also low in fat, cholesterol-free, high in fiber, and certified non-GMO, Right now you can also print a $1 Hodgson Mill Pasta coupon to make this recipe even more budget friendly!

1 box Hodgson Mill Whole Wheat Bow Tie Pasta
1 cup corn kernels (fresh cut works best, but well drained frozen or canned works too)
1 tsp chili powder
½ tsp ground cumin
Salt & pepper to taste
1 Tbsp olive oil
1 small onion, diced
½ green pepper, diced
1 cup cooked shredded or chopped chicken breast
1 cup salsa
½ cup Mexican cheese (Queso Fresco)

Follow package directions to prepare pasta. While it is boiling, heat a large frying pan coated with cooking spray over medium heat. Add corn, sprinkle with chili powder, cumin, salt and pepper. Cook, stirring frequently, until kernels are browned. Set corn aside. Add oil to pan and heat. Sautee pepper and onion. Stir in chicken, and salsa – heat through. Sprinkle corn and cheese on top and serve.
