This delicious Pecan Pie Bars recipe is inspired by pecan pie. One of my very favorite parts of Thanksgiving is my mom’s pecan pie. It is SO good!
It was the best when my sister lived in Texas and was able to gather pecans from the tree in her front yard. But, even with store-bought pecans it is super yummy.
But sometimes pie isn’t the most convenient dessert to serve or to eat – especially in a party setting. This Pecan Pie Bars Recipe is perfect for occasions where a hand-held dessert is more convenient, for bake sales and just everyday snacking.
The #1 reason it’s so easy to make is that you don’t need a pie crust like with a pecan pie. Instead you just press a 4-ingredient dough into the bottom of your pan that makes its own shortbread crust. Easy peasy!
I’ve been told this recipe is similar to the Southern Living pecan pie bars recipe, but I still haven’t found it, so I’m not sure of the differences.
Pecan Pie Bars Recipe
INGREDIENTS
2/3 cup Sugar
1/2 cup softened Butter
2 tsp Vanilla
1 1/2 cup Flour
2/3 cup Brown Sugar
1/2 cup Corn Syrup
1/4 tsp Salt
3 Eggs
1 cup chopped Pecans
How to Make Pecan Pie Bars:
Preheat oven to 350.
Spray bottom and sides of 8×8″ pan with cooking spray.
Cream together sugar, butter and 1 teaspoon vanilla.
Add in flour and mix until incorporated.
Press dough in bottom and slightly up sides of prepared pan.
Bake 15 minutes or until edges are light brown.
Stir together brown sugar, corn syrup, 1 teaspoon vanilla, salt and eggs until blended.
Fold in pecans and pour pecan filling over crust.
Bake 25 minutes or until set.
While still warm, run a knife around the edges to loosen from sides.
Cool pecan bars completely before cutting.

yummm!!! It is like pecan pie without the crust… which I always break off and leave on the plate anyway 🙂
