I always find it hard to get home fries nice and crispy when cooking them on top of the stove, especially without using a lot of oil. And I’m not a fan of adding a ton of oil to my cooking.

This oven-baked home fries recipe is easy to make and it cooks in the oven while you are preparing the rest of your meal. It’s also a good way to add in some veggies with the potatoes!
Easy Crispy Oven Home Fries
Ingredients Needed:

- potatoes (we prefer russet)
- green or yellow bell pepper, chopped
- red bell pepper, chopped
- small onion, slivered
- vegetable oil
- salt and pepper
- optional: garlic powder, sage, or other seasonings you like
How to Make Home Fries in the Oven:
Heat oven to 450 degrees.
Dice the potatoes into cubes about 1/2 inch on each side.
Mix potatoes with peppers and onions along with the oil and seasonings.
Spread on a greased rimmed baking pan or cookie sheet.
Bake for 40-50 minutes, flipping once or twice, or until crispy.
What Type of Potato is Best for Home Fries?
We like to use russet potatoes for home fries. They are very starchy will helps them to become soft and creamy as they cook and they can also develop a nice crispness. Not to mention, they also absorb spices well.

Can I make these ahead of time and reheat. If I make ahead, should I only partially bake

I haven’t tried making them ahead of time, but I think your idea to only partially bake is a good one. That way when you go back to reheat them they still have a chance to get nice and crispy without drying out.

I like mine crispy also. I hate cooking them on the stove because it takes so much oil. Then they just taste like oil. I will have to try your recipe. If I can make them a little healthier then we might have them more often. Thanks!

Yum, I love the addition of onions, peppers and garlic to potatoes. It gives it that southwestern charm! I like having them as a breakfast side. I haven’t tried baking to get the extra crisp taste, just stir-frying them in a pan, but this might work just as well and it would require less time at the stove. A flip in between might just be enough to get them the preferable way. Thanks for sharing!

I have never considered using peppers with a potato dish like that. I would have to make the slices big enough for Boo to pull out, though.
