My very favorite kind of recipe is one where only a little bit of work is involved but you end up with a delicious, hearty meal that looks and tastes like you spent hours making it.
For those types of recipes, handy helpers are a MUST, so that’s why I was glad to be introduced to Steamfresh® Flavor Full veggies and Farm Rich® Smokehouse.
While they’re great components to serve together “as-is” for a quick and easy meal, I am a big fan of casseroles (or hot dishes as we Minnesotans like to call them) and I set out to create one that was all my own.
Steamfresh® Flavor Full are frozen vegetables that are (like the name says) full of flavor! There are eight different varieties with flavors like Barbeque Sweet Corn, Wasabi Peas and Ranch Broccoli.
While checking out the full selection in the frozen food aisle at Walmart, I selected the Sour Cream and Onion Potatoes for the base of my recipe.
I have fond memories of Sour Cream and Onion Potato Chips from my childhood. We always stopped at the small local store after church on Sundays to get a treat.
If we got something sweet it was usually doughnuts or frosted pumpkin bars. If it was something savory, it was usually Sour Cream and Onion Potato chips!
For the next layer of my casserole I checked out the Farm Rich® Smokehouse meats in the freezer case.
It was hard for me to choose because many of them would have worked in my dish (Dry Rub Smoked Chicken and Mustard Pork BBQ were both in the running) but I settled on the Farm Rich Smokehouse Pulled Pork BBQ.
With the Steamfresh® Flavor Full Sour Cream and Onion Potatoes and Farm Rich® Smokehouse Pulled Pork BBQ in my cart as the stars of my recipe, the only other things I needed were shredded cheese and green onions. Check out how easy it is to make this!
Cheesy Pulled Pork Potato Stack Recipe
Ingredients:
One 20 oz package of Farm Rich Smokehouse Pulled Pork BBQ
Two 10 oz packages of Steamfresh® Flavor Full Sour Cream and Onion Potatoes
3/4 cup shredded cheddar (or cheddar blend) cheese
Green portions of 2 green onions, sliced
Directions:
Preheat oven to 350 degrees. Prepare Pulled Pork and Potatoes according to package directions.
Spread potatoes in the bottom of a 9×9″ baking pan.
Spread pork over potatoes.
Sprinkle cheese over dish.
Top with green onions.
Place in oven and bake for 15 minutes or until cheese is melted.
That’s it!! As I said, this recipe is SUPER easy. But, it is also sooooo delicious! To be perfectly honest it turned out even better than expected.
My husband loved it and asked if I could put the leftovers in the freezer so he can eat them when I am traveling next week. Success!
Cheesy Pulled Pork Potato Stack
Ingredients
- One 20 oz package of Farm Rich Smokehouse Pulled Pork BBQ
- Two 10 oz packages of Steamfresh® Flavor Full Sour Cream and Onion Potatoes
